The crustaceans are greenish blue in color.
The color changes when baked or boiled because there is a lot of reddish pigment called astaxanthin in the shell.
Astaxanthin, however, is blue, combined with protein in living animal tissues.
Therefore, the body color of these crustaceans looks similar to rocks and mudflats, so they are not visible to the enemy.
However, when the crab is baked or boiled, the protein and astaxanthin are separated.
Because astaxanthin has the property to separate protein when these meet heat, acid, and alkali.
That's why the body color of blue crabs and shrimp turns red because Astaxanthin has its original color.
